- Preheat oven to 375 degrees. Line a baking sheet with parchment paper.

Cut off the tops of 4-5 apples. Using a knife, core the apples to create a bowl. Using a spoon, dig out the inside and set apple chunks aside.

In a small bowl, combine the apple chunks, sugar, cornstarch, lemon juice, vanilla, cinnamon, nutmeg and salt. Mix until combined. Spoon the filling into the apples.

In a small bowl, whisk together the flour, oats, brown sugar, cinnamon, baking powder, and salt. Cut in the cold butter using a pastry blender until small clumps form. Sprinkle the streusel over top of each apple.

Place the apples onto the baking sheet and bake for 30-40 minutes or until the crust is browned and the filling is bubbly. Allow to cool for 10 minutes before serving. Top with vanilla ice cream and honey.
