Honey Pumpkin Muffins

 

INGREDIENTS

  • 1 1/2 cups flour
  • 1 1/2 tsp. baking powder
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 1 1/2 tsp. ground cinnamon
  • 1/2 tsp. ground ginger
  • 1/4 tsp. ground nutmeg
  • 1/4 cup butter
  • 3/4 cup Rango Honey
  • 1 egg
  • 1 cup pumpkin
  • 1 cup walnuts, optional

DIRECTIONS

  • In a small bowl combine all dry ingredients; flour, baking powder, baking soda, salt, cinnamon, ginger and nutmeg; set aside.
  • In a larger bowl beat together butter, honey, egg and pumpkin.
  • Add in the flour mixture, mixing until just blended; stir in walnuts if using.
  • Pour into 12 cupcake liners.
  • Bake at 350°F for 25 to 30 minutes, or until toothpick inserted in center comes out clean.
  • Remove from oven to let cool before serving.
