Honey Pumpkin Muffins
INGREDIENTS
- 1 1/2 cups flour
- 1 1/2 tsp. baking powder
- 1 tsp. baking soda
- 1/4 tsp. salt
- 1 1/2 tsp. ground cinnamon
- 1/2 tsp. ground ginger
- 1/4 tsp. ground nutmeg
- 1/4 cup butter
- 3/4 cup Rango Honey
- 1 egg
- 1 cup pumpkin
- 1 cup walnuts, optional
DIRECTIONS
- In a small bowl combine all dry ingredients; flour, baking powder, baking soda, salt, cinnamon, ginger and nutmeg; set aside.
- In a larger bowl beat together butter, honey, egg and pumpkin.
- Add in the flour mixture, mixing until just blended; stir in walnuts if using.
- Pour into 12 cupcake liners.
- Bake at 350°F for 25 to 30 minutes, or until toothpick inserted in center comes out clean.
- Remove from oven to let cool before serving.
